Pretty In Pink

 Well I am in the middle of projects at the moment and don't really have anything to reveal to you that I have completed lately. I thought though I would show you some pretty pictures of my garden. My roses are exploding all around me and they are a delight to look at everyday. 
 




I just love to pick them in bunches and arrange them around the house. Flowers make me happy and these roses are my all time favourites. They're called a Pierre De Ronsard climbing rose. I planted 4 bushes of them about a year ago now and this year they're have just exploded with roses. Much to my pleasure!

 These photos above and below are of the Pierre De Ronsard the ones further down with the pinker center are classed as a "Blushing" Pierre De Ronsard!

 





Aren't they just gorgeous.... I could look at them forever! Other flowers in my garden including my rose hedge of "Bonica" roses, I also planted a year ago have exploded with flowers. They are a floribunda rose bush which means they constantly flower. I generally get constant flowers for a good 4-6 months.





The rest of my garden has also been a pleasure to look at with lots of different types of plants flowering - herbs, daisys, chamomile and chive bushes.

Tasty Tuesday - Coconut, Blueberry Patty Cakes

I had a suggestion from a friend recently to put up some recipes that are lunch box friendly for kindy or pre school. Ones that are quick to make and that can be popped into lunch boxes for morning or afternoon tea. I did a bit of research on kindy and pre school food protocols and boy oh boy will I be in for a treat when I have kids and have to make school lunches.
The rules seem pretty tight on what is allowed in lunch boxes, which is understandable in the fight against childhood obesity. I totally agree with where they are coming from but does it make it difficult for busy mums and dads to try and put a lunch box together?



I don't have children so I don't know what it is like to try and put a lunch box together everyday for weeks on end. Trying to keep variety, interest and cater to your childrens likes and dislikes.
I looked up a few pre schools food specifications and one schools list of discouraged foods was as follows:
  • Packet chips/twisties/corn chips/cheezels etc
  • Roll ups
  • Lollies
  • Jelly/Jelly cups
  • Sweet biscuits of any variety
  • Cakes/slices (Health cakes ok)
  • Chocolate Muffins
  • Sprinkles i.e. Fairy Bread
  • Chocolate bars
  • Choc chip muesli bars
  • Cereal bars e.g. LCMs
  • Dessert ‘cups’ e.g. Quick, Yogo, Danone
  • Fruit drops/jubes
  • Popcorn and Nuts
  • ‘Fruit Snack Bars’
  • Peanut butter
  • Nutella 


The encouraged foods were:
  • Sandwiches (on variety of breads e.g. pita, pocket, rye, multi-grain, Lebanese, mountain bread)
  • Salad
  • Vegemite
  • Egg
  • Salmon/tuna
  • Cottage cheese
  • Chicken
  • Ham
  • Baked beans
  • Fruit
  • Spaghetti
  • Fruit salad
  • Rice salad
  • Noodle salad
  • Yoghurt
  • Custard
  • Tinned fruit (no added sugar)
  • Cheese
  • Baked vegetable slices
  • Rice crackers
  • Dried fruit e.g. sultanas, prunes, dates, apricots, etc
  • Rissole/fish cakes
  • Salada/Vita Wheat
  • Vegetables e.g. cucumber, celery, tomatoes, baby beets, snow peas, carrot sticks, capsicum.


The recipe that I created with kids in mind was these Coconut & Blueberry Pattycakes.
So looking at the contents of this recipe I honestly don't know how it would hold up if it was scrutinized in regards to the nutritional content of the pattycake. I tried to make it low in refined sugar, high in fibre and low in white flour. It probably would be more appropriate for at home snacks. You will have to let me know if you make it for your kids and send it to pre school, what the verdict is on them.

Coconut & Blueberry Patty Cakes
 

Makes 24, Patty Cakes

Ingredients:
1 ½ cup lite coconut milk
1 cup coconut, desiccated
1 ½ cup wholemeal spelt flour (* You can substitute with wholemeal flour)
1 ½ tsp baking powder
½ tsp baking soda
1/2 cup honey, warmed until runny
1 egg
1 tsp vanilla essence
1 tsp coconut essence *optional
½ cup fresh or frozen blueberries
¼ cup macadamia roughly chopped.

Method:
Preheat oven to 175 degrees. Prepare muffin tins with patty cake papers.
In a large bowl combine all dry ingredients, sifting flour and baking powder & soda together.
In a small bowl place the egg, roughly beaten, coconut milk, honey, and essence and mix to combine.
Mix the wet ingredients into the dry ingredients and add the blueberries and macadamias to the mixture. Mix until combined and place spoonful of the mixture into prepared patty papers. Place in the oven and cook for 15-20 minutes or a skewer comes out clean.

Wingback Chair Slipcovers... At long last!

I can finally announce that at long last I have completed my wingback chair slipcovers. It has been a year in the making and after MANY MANY MANY nervous breakdowns, hair pulling, months of doing nothing and near hatred towards these poor chairs and ottomans - I.am.finished! Yes I can yell and scream it at the top of my lungs... I HAVE FINISHED THOSE DEAR SLIPCOVERS!


As you can see in the picture above they were in a bad state when I purchased them from the tender center last year. I knew I got them for a bargain price of $50 for two chairs and two ottomans but thinking about it now, was it a bargain with all that I had to go through to make slipcover them? 
I thought about this for a while and I think YES! They look great (if i don't say so myself) and I am proud of my achievement of completing them all by myself. 



I first ummed and ahhed over whether to make slipcovers or get them re-upholstered professionally. After a quote of nearly $2000 to get them re-upholstered professionally I chose to make slipcovers (After picking myself up from the floor). 



I started with the ottomans to get my confidence up and to start with something easy on my first slipcover. I had some dramas to start off with but after overcoming them and getting the hang of pinning and sewing piping I was on fire. I completed the ottomans within a couple of weeks and I was proud as punch with the result.



I'd only just climbed to base camp in the biggest mountain climb of my life! (Well not exactly but it just sounded dramatic that way). I did a practice run on making a slipcover out of calico on one of the chairs.... well that ended in tears!



It was a mess ( picture above really doesn't do it justice), puckers, horrible sewing, it was a train wreck and this was just a practice run. God help me with the proper ones. I was scared now. I watched Miss Mustard Seeds Video Tutorials on sewing slip covers and that helped me heaps. It was many many months after I finished the ottomans that I started to attempt sewing the proper slipcovers!





I began pinning, laying and cutting fabric, sewing piping and trimming and it slowly began to take shape - little by little. There were many weeks in between some stages as I got stuck and needed some time out to think about how to go about fixing the problem. My husband was VERY patient during this time as the chairs would sit like this picture below for weeks.



The house also became a "little" messy - to say the least. Cotton, fabric trimmings, dust, pins and sewing objects were strewn around the house. My "sewing room" was on the kitchen table and when I was in sewing mode  I didn't like to pack everything up to only take it out the next day to start again so it stayed strewn around the house for many days.



Then on one fateful spring day.... I pinned and sewed the last seam, snipped the last piece of cotton and ironed the last piece of fabric..... I was complete and boy was I ecstatic! The legs I bought and stained are yet to go on but all the sewing is done! They are not 100% perfect but I am happy with them so sit back and enjoy the end result!









Since I was in the sewing mood still I quickly whipped up the cushions on the chairs to give them a finished look. I LOVE the material.... so cute!



Would I ever do it again... probably not!

Tasty Tuesday - Chocolate Pikelet Stacks

I just love berry season... don't you? Strawberries are one of my favourite berries because they are so versatile. They are in abundance at the moment and I picked a few punnets up cheap at Woolworth's the other day and wondered what I could use them in.


A few recipes flitted through my mind -  homemade strawberry jam... hmm to much work, strawberry sorbet... mmm not really hot enough yet, chocolate dipped strawberries... mmm maybe... then I thought what I love strawberries most on... Pikelets! So I thought why not combine the chocolate factor and make Chocolate pikelet stacks with strawberries and cream... Perfect.



This makes a great dessert option, it is very easy and quick to make. The pikelets can be made in advance and frozen for later use. It would also make a decadent morning or afternoon tea along side a nice cappuccino or cup of tea.



If strawberries aren't your thing you could swap them for some fresh raspberries or blueberries.... but they won't be as cheap as strawberries (or as good).
The trick to making uniformed sized pikelets is to use greased egg rings to cook the mixture in. Another tip also is to keep the temperature on the lower end of the scale when cooking the pikelets, the chocolate mixture tends to burn easier.




Chocolate Pikelet Stack

Makes 4-5 Stacks

Ingredients:
2 x eggs
½ cups castor sugar
Pinch of salt
1 cup of milk
1 ½ cup plain flour, sifted
3 Tbsp dark cocoa powder
1 level tsp baking soda*
2 level tsp cream of tartar*
(*Alternately you can replace these with 2 ½ tsp of baking powder*)


1 x 250g punnet strawberries, sliced
Strawberry jam
300ml whipping cream
1 tsp vanilla essence
3 Tbsp icing sugar

Method:
In a bowl of an electric mixer place the eggs and beat for 1 -2 minutes until pale. Add sugar and salt and beat for a further 2 minutes until sugar is dissolved. Add milk and add sifted flour, soda, and tartar and coco powder on low speed until combined. Turn speed up and beat for 1 minute. Set pikelet mixture aside for 30 minutes to rest.
In a clean mixing bowl place the whipping cream, sifted icing sugar and vanilla essence. Beat cream mixture for 3-5 minutes until stiff peaks form. Set aside in fridge.
Grease a sauce pan with cooking spray or butter and place over a medium heat. Place four greased egg rings into the pan and place a tablespoon of mixture into each ring. Cook mixture for 30-40 seconds until bubbles start forming and bursting on top of the mixture. 
Flip egg rings and cook for a further 30 seconds on the opposite side. Remove egg ring from around the pikelet and place on a cooling rack. Repeat this process with the rest of the mixture.
Meanwhile in an electric mixer bowl add the whipping cream, vanilla essence and sifted icing sugar. Beat until firm peaks form. Set aside.
To assemble place one pikelet on a plate, spoon a teaspoon of strawberry jam over the pikelet followed by a spoonful of cream and a few slices of strawberries, place another pikelet on top and repeat the process.
Finish the last pikelet off with a dollop of cream and a few slices of strawberry for garnish.
