Tasty Tuesday -Birthday Treat: Chocolate Pudding in a Teacup!

This post is very special to me.... not only am I celebrating my last birthday today as a childless women but I am also posting one of my favourite desserts at the moment..... Chocolate Self-saucing Pudding!
This pregnancy has got me craving sweets like I have never craved before and chocolate pudding was one of the indulgences that I think about making A.LOT!





I try not to give in to often to the desire to whip up chocolate pudding but the cravings got the better of me and I just had to make one up... in a tea cup! I though I better celebrate my last childless birthday in style today with a pretty chocolate tea cup pudding surrounded by my favourite flower - roses. Not to mention in my favourite colours... pink!



I am pretty sure I really don't realise how much my life is going to change in 4 months time when bub arrives. I try and imagine life with a newborn and I really can't comprehend it.... maybe a little but I think it will be a bit of a shock to the system to say the least.




Maybe I will be making chocolate pudding every day  just to survive! :-)
I am really looking forward to finally meeting bub though. This has been such a long time in coming with our 3 1/2 year infertility journey and waiting 40 weeks for this child has left me very impatient to meet this little one. I say at least once a week "I'm done being pregnant let's move on to being a mum".... but maybe I do need a little bit more time to adjust to this parenthood thing!





I'll just continue eating my chocolate pudding in the mean time pondering the future! 
This recipe is done in the microwave... like the last three recipes I have posted lately. I am sorry but I am just loving this quick microwave cake in a cup recipe trend... so easy, quick and super tasty.



It also saves you making a whole chocolate pudding and then being tempted to want to eat the whole thing.... which is quite possible with my appetite at the moment. So these little pudding cups make great portion control for a hungry pregnant women.



Chocolate Pudding in a Cup






Chocolate Pudding in a Cup

Prep Time: 5 min
Cook Time: 1 min
Makes: 2 mugs


Ingredients:
    In each mug add:
    • 1 1/2 Tbsp SR Flour
    • 1 1/2 Tbsp Brown Sugar
    • 1 1/2 Tbsp Cocoa powder
    • 1 1/2 Tbsp Milk
    • 1 1/2 Tbsp Oil
    • 1/2 egg (simply beat one egg together and divide between two cups)
    Topping
    • Mix together:
    • 1/2 Tbsp Cocoa
    • 1 Tbsp Brown Sugar
    • 1 1/2 Tbsp Boiling Water

    Instructions:
    1. In each mug place the flour, cocoa, sugar, oil, milk and egg together and mix to combine. Flatten top of mixture.
    2. Sprinkle topping evenly over the cake mixture and add hot water.
    3. Place on a saucer and microwave for 1 minute.
    4. It may splatter a bit so place a piece of paper towell on top of mug to reduce this.
    5. Serve with a dollap of cream or icecream.
