Tasty Tuesday: Vanilla Milkshake Cupcakes

  
 
 
I have been craving milkshakes in the last few weeks of my pregnancy. The thing is I have been craving REAL true blue milkshakes. The kind with full cream milk, ice cream, vanilla flavouring all frothed up with a sprinkle of milo on top to finish it off. But again since I can't drink proper milk or eat ice-cream I have sadly having to resort to the alternative of rice milk, banana and vanilla milkshakes.... not exactly the same but it does take an edge of the cravings.





I am now a offical stay at home wife and mumma to be. I finished work last week and  I am trying to find my way in the world of stay at home wife. It's day one as I write this and I am already struggling to figure out how to organise my days and not over do it in this point of my pregnancy. I am 33 weeks and counting down and cannot wait to meet this little wiggler constantly poking me.


I thought I would combine my cravings of milkshakes into cupcake form for a farewell morning tea for my co-workers. They love me baking treats for morning tea and were a bit despondant that they wouldn't be getting this from me anymore.


So in the last hurrah I thought I would make something special and create a cupcake for this special occasion. I had the mini chocolate corinthian sticks left over from my mum's 50th birthday party dessert table and they finished the cupcake off perfectly.


The cupcake base is a beautiful fluffy vanilla cake recipe I used from Sweetopolita. If you looking for a special cake recipe make sure you visit this site. She has some amazingly gorgeous cakes that look just devine. The cake is beautifully soft and delightfully moist. It's everything you ask for in a vanilla cake really.


I made a simple vanilla buttercream for the top and finished it off with a sprinkle of milo. Yum. I found these cute cupcake papers in my local junk shop for $2.50 for 24. Bargain. These cupcakes were well received and I am happy to report the only traces left of them were the ring of crumbs around everyone's feet as they finished them off outside in the sunshine.



One note to remember though is don't place the chocolate corinthian sticks into the cupcakes until just before serving. I put them in the night before and sadly when I presented them to my co-workers they had gone soft. So I was a little disappointed with that.




Vanilla Milkshake Cupcakes
Makes 24

For the Cupcakes:
Fluffy Vanilla Cake Recipe by Sweetapolita.

To garnish:
1/4 cup Milo, to sprinkle over iced cupcakes
24 Mini Chocolate Corinthians.


Vanilla Buttercream Icing
Prep Time: 10 min
Cook Time: 15min

Ingredients (Ice 24 cupcakes)
  • 250g butter, room temperature
  • 250g copha, room temperature
  • 2 tsp vanilla essence
  • 750g icing sugar
  • 1 Β½ tbsp Pavlova magic
  • ΒΌ cup water
Instructions
Add the copha, butter and vanilla into an electric mixer, beat until combined. (Make sure these ingredients are at room temperature or you will not get a smooth consistency)
Add the icing sugar a cup at a time until combined.
Add the Pavlova magic and water (add more icing sugar if the mixture is not thick enough) and beat on high for about 10 minutes.
Colour in whatever shade you desire.
Make sure the butter cream is covered when not using as it will form a crust which is fine once piped but makes it difficult if you want pipe.
