Chocolate, Banana & Peanut Butter Mousse - Dairy Free, Gluten Free.


As I have been going through the Living Dairy Free series I thought I should make up a delicious dessert to showcase what you can make that is fab and dairy free. Sometimes you need to think out of the box a little bit when going about trying to replicate a certain dessert. Think of mousse for example.


Most mousse recipes call for melted chocolate and lashings of whipped cream to give it's smooth and velvety consistency. It is a dairy nightmare in a bowl really. I love chocolate mousse and wanted to figure out another way to make it without the dairy nightmare. I made a version of this for my Ultimate Chocolate Brownie V2.0. If you are a brownie lover you are going to love that brownie. It's dairy free, gluten free and sugar free but totally yum.

Anway back to the mousse... you may get a little taken back to see what the main ingredient in this dish is.... Avocado. I promise you though you cannot taste it. It is what gives the mousse it's velvety mouth feel and luscious texture. If you're a old hand at looking for dairy free recipes you may of seen a version of this some where along the line. It is nothing ground breaking but I thought I would put my spin on it and make it a little bit more decadent by adding swirls of peanut butter through it! Gosh I love peanut butter. Do you? I could eat it by the spoonfuls out of the jar all day long.  I am more inclined to choose a smooth peanut butter but hubby prefers crunchy. I have been buying a 100% Organic Peanut Butter from my local supermarket which does not contain any extras such as salt, sugar and preservatives. It is 100% peanut butter.


Like any dessert it is best eaten in moderation. Although it is totally healthy, sugar free, gluten free and all that it is pretty rich so I would save it for the weekend or special occasions.  Served in pretty teacups or mugs is totally a must and eaten with cute ceramic spoons makes the whole experience that little bit special. I made a nut free version for my little boy and he gobbled it up with gusto - they don't know it's good for them so why not hide a few good things in this mousse and serve it to your kids.




Chocolate, Banana & Peanut Butter Mousse - Dairy Free, Gluten Free

Ingredients (Serves 2-3)
  • 2 large, ripe avocados
  • 1 large, ripe banana
  • 2-3 tablespoon smooth/or crunchy organic peanut butter
  • 4 tablespoon unsweetened cocoa powder
  • 4 tablespoon almond milk
  • 4 tablespoon rice malt syrup
  • 2 teaspoon coconut oil
  • 2 teaspoon vanilla extract
  • ΒΌ teaspoon salt
To Garnish
  • 2 tablespoons macadamias, roughly chopped
Instructions
In a small sauce pan over a low heat melt the rice malt syrup and coconut oil stirring together. Set aside to cool completely.
In a blender or food processor add the avocado, banana, peanut butter, cocoa, vanilla, almond milk and salt along with the coconut oil and rice malt mixture. Blend until silky smooth and all ingredients are combined.
Place spoonfuls of the mixture into a serving glasses and top with chopped macadamias.
Place in the fridge to cool for 2-3 hours.
