Green Monster Savoury Pancakes

I'm starting my first post for the New Year off with a bang. A big mean, green savoury pancake bang. None of this detox, fluffy salad stuff is going on here. I want some real food with substance and I wanted it colourful, full of flavour and drenched in hot sauce. Lot's and lots of hot sauce to be exact. Anyone else with me? Healthy food does not have to be bland and boring. These Green Monster Pancakes will still tick the health kick box with some hidden goodies in the batter make sure you add a fried egg on top and oh golly gosh you have some excellent tucker right there. Forget sickly sweet pancake offerings at breakfast time, whip a batch up of these Green Monster Pancakes.

I haven't made any resolutions this year, in fact, I don't think I've made any in a long, long, long time. Honestly, they aren't worth it. I just relish the squeaky clean year ahead and enjoy a fresh start. I am just so happy to say goodbye to 2015 and hello to 2016 to be honest. The last half of 2015 was a nightmare - one of us was always sick, I was overworked and stressed, and I felt like I was failing at life. I think I limped over the line to celebrate Christmas, and even that didn't end up being a celebration. We went to the Sunshine Coast with hubby's family and all shacked up in a house together. However, a nasty bug was lurking in the wings for everyone. Think 17 people in one house for a week all coming down with gastro during that time. It wasn't exactly a relaxing holiday.

I had some time to ponder leading up to the new year and decided that although I wouldn't be making any resolutions, I needed to make some necessary changes to help balance out life. Like learning to say "No", working less (ha), playing more, stopping to smell the roses and learning to enjoy the little things. It sounds all wonderful and fanciful but I will regularly be reviewing where I am at in life this year instead of letting things pile up on me and drowning me in a pit of despair. Wish me luck I might need it.

In need of some seriously fresh and healthy food, I made these Green Monster Savoury Pancakes and they sure did hit the spot for my weary body. Packed full of goodness with zucchini and spinach blitzed into the batter. I topped it with some of my favourite fixings such as a fried egg, sauerkraut, some baby spinach, avocado and freshly picked cherry tomatoes. Perfection. Don't look past these pancakes because they're green it will be your loss if you do. I even used these delectable pancakes cold as a wrap with some leftover meatballs and salad. An excellent alternative to the store-bought wrap and so full of goodness. Plus they are allergy friendly for those who are intolerant to dairy and gluten.

I was pleasantly surprised that J.D was all for creating his own pancake wrap. He skillfully topped his pancake with his favourite salad options and some grated cheese. I topped his with some scrambled egg and helped him wrap it all up into an edible roll. I find he is more willing to eat new things that he can take part in creating even it's just putting the end touches to it like these pancakes.

If you do, make these don't forget the hot sauce. Lots and lots of it!

Green Monster Savoury Pancakes

Makes:

 6-8 pancakes

Ingredients

:

  • 6 eggs
  • 2 medium Zucchinis, cut into large chunks
  • 2 cups baby spinach
  • 1/4 cup almond meal
  • 1/2 cup tapioca starch
  • 1/8 cup coconut flour
  • 1 cup almond milk
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 teaspoon bicarb soda
  • 1 teaspoon apple cider vinegar

Instructions:

  1. In a high-speed blender and add all the ingredients in the order listed. Blend the ingredients together to form a smooth batter.
  2. Heat a large pan over medium heat and grease with a little coconut oil or olive oil.
  3. Once the pan has heated, add a ladle full of the pancake batter into the pan. Using the back of the ladle smooth the batter into a circular shape.
  4. Cook for 1-2 minutes until the bubbles start to rise to the top of the batter and burst. Flip and continue to cook for a further minute or so.
  5. Remove from the pan and let the pancake cool.
  6. Top your Green Monster pancake with a fresh baby spinach, avocado, cherry tomatoes, a fried egg and sauerkraut. Finish off with lashings of hot sauce.

Cooks Notes

  • These pancakes can be kept in a refrigerated for 3-4 days or frozen for up to 3 months.
  • These pancakes can be used cold as an alternative to a wrap.
