Deep Dish Banana & Walnut Choc Chunk Cookie

There is nothing like sick kids that puts a spanner in the works of your carefully planned week. I was hoping to blog at least twice last week because I've got recipes backing up that I want to share with you. Like who wouldn't want the recipe for this Deep Dish Banana, Walnut & Choc Chunk Cookie? For the life of me, I just couldn't find the time to sit down and write it out.  All three kids are currently sick at the moment. J.D has croup and the two girls have an awful head cold. Snot is flowing freely and I am trying my best not to gag when I have to wipe the two big tracks making their way down each of their faces every five minutes. I don't do snot very well. Sorry, let's get off that topic quickly because it makes my stomach turn.

The kids have been especially needy during this time so any spare time that I find myself with it's trying to do the jobs I haven't been able to do during needy hour - which at the moment is every hour of the day. Dishes, washing, cleaning, folding, folding and more folding. I hate winter!! There seems to be triple the laundry to do during winter time with the extra layers that everyone has to wear. I feel like there is a never-ending pile of dirty laundry, laundry that needs hanging out, laundry that needs folding and laundry that needs putting away. I currently have a Mount Everest equivalent of laundry that needs folding and putting away sitting on the lounge room floor. It's huge and I just keep walking past it thinking I really need to do that and get distracted by the kids/ social media/ need time out and it get's put to the bottom of my list for the day. So Sunday nights turn out to be laundry date night and endless folding ensures.

Anyway, I didn't come to tell you about my laundry problems that's for sure. I have no idea why we got onto that topic anyway. Let's get back to this Deep Deep Dish Banana, Walnut & Choc Chunk Cookie because it is EVERYTHING! A massive cookie with gorgeous chunks of gooey, melty chocolate with sweet pieces of candied rum walnuts scattered on top all cooked in the world's most beautiful casserole dish. I was given this beautiful round casserole dish from Villeroy & Boch to develop some recipes for and this cookie is one of them. The plate that is under the casserole dish is a serving plate that you can rest the dish on or use it as a lid over the casserole dish. They are beautifully made and so easy to clean. No scrubbing for hours to get bits of food off. I am in love.

This deep dish cookie is gooey and soft in the middle with a perfect crunchy edge. Gooey centres are life and crunchy edges are the cherry on top. You have to make the deliciously sweet Rum Candied Walnuts to sprinkle on top. These things are so moreish and I couldn't help devour a handful while I was setting up for this shoot. It is hard to stop at one. I find my self-control goes out the window with them. You must serve it with generous scoops of good quality vanilla ice cream and let it melt slightly and run down over the cookie slice. Yum.
