Sticky Honey & Soy Baked Chicken Thighs

Got another great weeknight dinner idea for you today and it's a family favourite of ours. Sticky Honey & Soy Baked Chicken Thighs! This is a meal that regularly goes onto our monthly meal plan without fail. Why because it's so easy to put together, it's no fuss to make and it's baked in the oven which means it's hands off cooking for me. That's my kind of cooking. I don't have time to be fussing over the stove top watching things saute, boil and steam. Slap it in a casserole dish and you are good to go. The end. Well not really but wouldn't it be nice if all meals were like that.

The key to making these Sticky Honey & Soy Baked Chicken thighs is to baste them in the cooking marinade a few times (when you remember) to give them a gorgeously thick and sticky coating. Yum. I keep the whole meal simple with a simple side of rice and stir fry veggies. Easy peasy. Leftovers of these thighs are so delicious the next day and I wouldn't go past putting it on a crusty baguette or Turkish bread for a killer sandwich. 

Hubby always eats leftovers from dinner for lunch the next day because it saves me searching for something to feed him and it's all prepared the night before. I also sometimes make an extra large batch of this and freeze it so that I only have to warm it up and cook the rice and veggies for an extra easy weeknight meal. Being a food blogger you would think that I would love to cook meals every night. That is far from the truth. I too get stuck in the mundane cooking duties of preparing meals every night. The thought of cooking dinner makes me wince. I am tired of it. Ha. I don't cook gourmet fare - because my kids won't eat it, we can't afford to eat like that and I just don't have the energy to be fancy. 

So the meals that I do prepare need to be quick, easy, fuss free but most of all taste delicious. Even though we don't eat gourmet food it still has to taste darn good. Do you enjoy cooking dinner ever night? Tell me in the comments below!

Sticky Honey & Soy Baked Chicken Thighs

  • 900g chicken thighs
  • 1 large white onion, cut in half and sliced thinly
  • 1 tsp sesame oil
  • 2 tbsp kejap manis
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp minced ginger
  • 2 tbsp honey


Preheat oven to 180 degrees C (fanbake).

Spread the onions along the bottom of a large rectangular casserole dish and line up the chicken thighs over the top.

In a small jug add the sesame oil, kejap manis, soy sauce, garlic, ginger and honey. Mix together.

Pour the marinade over the over the chicken thighs. Place into the preheated oven and bake for 45 minutes. At the 20 minute mark baste the chicken thighs in the marinade. Repeat this 10 minutes before the end of cooking.

Remove from the oven and serve with stir-fried veggies and rice.

You can make the marinade ahead of time and store it in the fridge.
