Hi guys, Happy New Year to you all. This is my first post for the new year and I thought I would slide into your life with these delicious Mango, Passion fruit & Coconut Macadamia Popsicle’s. I teased you guys on Instagram & Facebook with them earlier this week and I promised I would have them on the blog by the end of the week and I am proud to say I delivered. With the heat wave hitting Australian shores at the moment, anything cold is sweet relief. Add in mango, lime juice, coconut & passion fruit finished with crunchy Macadamia’s and you are in for a real treat. It’s been bearable where I live hitting mid 30’s (degree Celsius) but if it starts climbing towards the 40’s I’m hibernating because I detest the heat.

I made a similar version of these Popsicle’s over here many moon’s ago (7 years in fact). Back when people actually commented and read your blog posts. Ha. I wanted to update it a bit into a simpler and healthier version with no egg or sugar and this one only requires a handful of ingredients to make. Plus this one also requires minimal equipment which is a win for me. Less dishes! Yay. Also I think my photography has improved a LOT since that popsicle post. Don’t you think?

When I was photographing these popsicle’s Miss H wandered over not interested in the movie that was on and wanted to help me. She’s my little helper she is. Always asking “What can I do, Mum?” or “What can I help you with?”. While I LOVE her helping spirit sometimes having little helpers are … let’s say difficult. Ha. Anyway on this occasion when she wanted to help me when I was styling these Mango, Passion fruit & Coconut Macadamia Popsicle's I thought why not make her part of the shot. She was pretty happy to be helping mummy and took the job very serious. I had to get her to smile when I was taking the shot below otherwise she was looking too serious. The lure of eating one of these popsicle’s after the shoot was a great incentive for her to help but she was more than happy to just plain help. I’m in love with those little hands. They are losing their baby chub and turning into a proper little girls hands. Wah!!! Don’t grow up so fast on me.

Mango, Passionfruit & Coconut Macadamia Popsicle's

Prep Time: 10 min + Chilling

Cook Time: nil

Ingredients (Makes 10 popsicles)

  • 500g frozen mango
  • juice of 1/2 lime
  • 250ml coconut cream
  • 4 tbsp passionfruit pulp
  • 2 tsp vanilla essence
  • 100g, roasted, unsalted Macadamia's, chopped

Instructions

In a blender add the frozen (or fresh mango if you have some) and lime juice and blitz for 1-2 minutes until the mango is smooth and creamy.

Scoop the mango mixture into the popsicle moulds gently tapping the moulds to remove any air bubbles from the mixture. Place popsicle sticks into the mixture if you need too.

Place into the freezer and freeze for 30 minutes to firm up slightly before adding the next layer.

In a jug add the coconut cream, passionfruit and vanilla essence and stir to combine. Remove the popsicle moulds from the freezer. Gently pour the coconut cream mixture on top of the mango mixture and place back into the freezer for a further 30 minutes.

Remove and gently sprinkle the chopped macadamias on top of the coconut cream mixture pressing down if it is slightly frozen. Place back into the freezer and freeze for 6-8 hours or until completely frozen.

Let the moulds sit out for 5-10 minutes to allow the popsicles to warm slightly and make it easier to remove.

Slide the popsicles out of the mould and ENJOY! :-)
