Good morning everyone... If you read this post and it doesn't make sense I apologise in advance. I am currently recovering from a weekend of camping (Yes I went camping) and let's just say I didn't get much sleep in this time... stories to come in a later post. So I'm feeling a little camping "jet lagged" to say the least. It seems when I get tired my brain dies and then everything I do or say doesn't seem to come out right! So bear with me today! :-)
I am in desperate need of one of these below... a good strong coffee, but with being pregnant I am trying to be good and stay off the stuff - it is very tempting today though! If you can drink coffee this blueberry and oat breakfast in a cup will go perfectly with a nice cup of peculated coffee or tea!
The recipe today was inspired for Anzac
day. I though about trying to make a twist on the good old anzac
biscuits but I thought I would instead make something for breakfast
using the two main ingredients of a anzac biscuit - golden syrup, and oats.
Oats are a great option in this breakfast muffin - it creates a low GI breakfast for people on the go. Oats regulate your blood sugar helping you stay fuller longer through out the day and not have spikes in your blood sugar which creates cravings and hunger.
The blueberries are just a nice addition to a good breakfast muffin - who doesn't like blueberry pancakes or muffins for breakfast. I always buy frozen blueberries because generally they are much cheaper than fresh and you can always have them handy to make something like this. You don't need to defrost them for this recipe as they heat up nicely in the microwave when you make this.
The down side to this recipe for me was I found it difficult to photograph and make appealing to look at. However the proof was in the pudding.... well muffin in this case was the taste! It was yum - not overly sweet for breakfast and a great option for your Anzac day brunch tommorrow!
Blueberry & Oat Breakfast Mug Muffin
Prep Time: 2 min
Cook Time: 1min 15sec
Ingredients (serves 1)
- 1 egg white, lightly beaten
- 1 ½ Tbsp Golden Syrup
- 3 Tbsp Milk
- ½ tsp Vanilla Essemce
- 1 Tbsp Oil
- 3 Tbsp Oats
- 2 Tbsp SR Flour
- ½ tsp Baking Powder
- 1 Tbsp Blueberries
- ½ Tbsp Chia Seeds
- ½ Tbsp Oats
- ½ Tbsp Blueberries
Instructions
In each mug place the beaten egg white, golden syrup, milk, essence and oil.
Give it a quick beat with a fork and then add dry ingredients.
Mix until combined. Sprinkle the top with oats and extra blueberries.
Place the mug in the microwave for 1 minute.
Check and put in for a further 10-15 seconds if you think it needs it. It should spring back when touched.
Serve with a drizzle of golden syrup or maple syrup.
