Tasty Tuesday - Bubble Muesli & Honey Slice

Its pedal to the metal for some mum's with the new school term starting this week. Is that you? I am sure the school run is back in action and the hectic mornings have started back up again. 

 

 As a kid I always dreaded the first day back after school holidays - actually I just dreaded going back to school full stop. I am so glad I don't have to go anymore! 



I think I needed a bit of incentive to get me going... something nice for morning or afternoon tea would always brighten my day as I'm sure it would brighten any school kids day. Morning tea time was my favourite time of day. You would always check out the other kid’s lunch boxes to see what yummy things their mums had packed them. 


I generally got salada biscuits with vegemite on them or an apple or fruit of some sort. But on the special occasions that mum would make us something homemade there was always an extra bounce in my step retrieving my lunch box at morning tea time.

 

This Bubble Muesli & Honey Slice will hopefully put a bit of a bounce in your kids step this week as they go to retrieve their lunch boxes at morning tea time.  This is an old recipe - one I loved my mum making for us for school lunches or for a treat on the weekend.



It is packed full of goodness - nuts, muesli, peanut butter and honey to top it off. Plus the kicker of this recipe is you don't even have to turn your oven on. It's a no-bake slice which is also a one bowl wonder. Can't beat that for a perfect baking recipe.


You could defiantly play around with the different nuts used in this recipe to taylor it to your kids taste buds. Adding some sultanas or cranberries wouldn't go astray either. The possibilites are endless of what you could mix and match in this recipe. Whatever you have in your pantry at the time is usually the case so don't be scared to experiment. Just try and keep the same quantities as the recipe so it doesn't throw it out.




Bubble Muesli & Honey Slice

Prep Time: 25min
Cook Time: 5 min

Ingredients (15 pieces)
  • 1/4 cup sesame seeds
  • 1 cup toasted muesli
  • 3 cups rice bubbles
  • 1/2 cup desiccated coconut
  • 1/4 cup sunflower seeds
  • 125g butter
  • 1/3 cup honey
  • 1/3 cup peanut butter
Instructions
Line a lamingtan pan with baking paper.
Toast the sesame seeds on an oven tray for about 5 minutes until golden brown. Keep an eye on them so they don't burn.
Combine the muesli, rice bubble, coconut, sunflower and sesame seeds in a bowl. Set aside
Combine the butter, honey and peanut butter in a saucepan and place over a medium heat. Stir constantly without boiling until the ingredients have dissolved.
Bring to the boil, reduce heat and simmer for 5 minutes without stirring.
Stir into dry ingredients.
Press into prepare lamington tin and refridgerate for 2-3 hours or until set before cutting.
