Chocolate Coconut Pudding Shots - DF, GF


















I looked back on some of the past recipes that I have created recently and it seems I have had a thing for chocolate and or strawberry related recipes. Like the Chocolate Baked Oatmeal, Baby Chino Cupcakes or the Caramelized Banana & Chocolate Loaf. I blame it all on the pregnancy but you can thank me later when you down ones or maybe even two of these little mini chocolate and coconut pudding shots. They kind of hit the spot especially for this crazy, hormonal pregnant women who is feeling a little on the edge. You know what I mean if you've been there counting down the days until you can give birth to the little human that is creating havoc in your stomach.



I made these one afternoon when I had an insane craving for something chocolatey and pudding like. It was torture to have to let these set and cool down in the fridge for a couple of hours but when I could dive into one there was a sigh of complete and utter delight come out of my mouth. Yep it hit the spot. I decided to make these on coconut milk to give them a delightful creamy texture and to make them dairy free however I think they would taste good on any other dairy free milk alternative. If you have no allergy problems real milk would also be the ticket. I used good quality dark coco powder to give these a nice chocolate flavour however again if you have no allergies a crumbling of good quality dark chocolate through the warm pudding mixture wouldn't go astray here.



You could top these delicious little shots with fresh strawberries like I have done here or a shaving of dark or white chocolate would also make a decadent addition. It all depends on what you've got in the cupboard. It's all about making do with what you've got in the cupboard. Well it is with me at the moment. What about you?





Chocolate Coconut Pudding Shots

Prep Time: 5 minutes + Cooling
Cook Time: 10 minutes
Makes: 8-10 Small Shots
Ingredients:
  • 2 eggs
  • 4 tablespoon cornflour, sifted
  • 3 tablespoon cocoa powder
  • 3 tablespoon sugar
  • 3 cups coconut milk
  • 1 teaspoon vanilla essence
  • 1 punnet strawberries, sliced
Instructions:

  • In a medium sized saucepan crack the two eggs into the base. Whisk the sugar into the eggs.
  • Sift in the cornflour and cocoa and whisk into the egg and sugar mixture until smooth.
  • Slowly add in the milk and vanilla essence whisking in to make sure no lumps form.
  • Turn the heat onto a medium flame and whisk the milk mixture for 8-10 minutes or until the mixture starts to boil and thicken. Lower the flame and continue to store until the mixture is very thick and difficult to stir.
  • Remove from the heat and let it cool slightly before pouring into mini shot glasses or ramekins.
  • Place into the fridge for 2-3 hours until completely chilled.
  • Top with sliced strawberries and serve immediately.

I do realise this blog has taken a bit of a baby direction lately and has steered away from it's original basis of furniture renovation, cooking and decorating. I am going to continue with these posts in the future when this baby is born and I hope that you will continue to join me in this blogging journey with a bit of babyness sprinkled throughout.
