7 Minute Mocha Self-Saucing Pudding + Video

It's been a while since I've posted a recipe. Sorry about that but when I'm in my first trimester of pregnancy the thought of any type of food sends my stomach rolling. It's not pretty. The last recipe I've posted to the blog was in last February, and it was chocolate related too. However this Mocha Self Saucing Pudding sits very close to my heart at the moment. It's warm, it's comforting, it's chocolate and coffee all rolled into one deliciously decadent pudding. It takes 7 minutes to make from pulling out all your ingredients to pulling it from the microwave. That makes it even more dangerous for this highly chocolate crazed pregnant women at the moment.

Even when I was at my sickest with this pregnancy chocolate always seemed to go down alright and coffee too. I am a tea drinker through and through, but this pregnancy has left me with a severe aversion to tea. It made me a little sad inside for a while especially now that the weather is cooling down, and I love curling up on the couch with a book and a cuppa to warm the hands and body. Coffee is an alright alternative, but I don't like drinking a lot of it as it doesn't do great things for my digestive system. Not that you really need to know that! Ha.

I last posted a

was for my birthday back in 2012. I was also pregnant at the time with J.D - it seems to be a thing when I am pregnant to have a craving for this type of thing. Maybe I'm having another boy?? This is a variation on that recipe, but I've ramped it up and made it ooey and gooey and injected it with coffee for a delicious mocha variation. If you have a craving for a

As I said it's dangerously easy to make and once you have all your ingredients out ready to go you will have this thing in your hands in no time. It's a one bowl wonder with just popping everything into a bowl and mixing it thoroughly together. While I could have made a single serve variation I thought these decadent types of things are best shared with someone you love, OR you can just have a backup in the fridge for the next day's cravings!

I made these in 1 cup ramekins but I think making them in a large mug would also work. You probably won't get the little bit of spillage that happens when you microwave them like I did with the ramekin. I made this dairy free for myself by using almond milk and topping it with the most divine vanilla bean coconut- ice cream. Pure decadence. Hubby gobbled one up at night and gave them the thumbs up. So if you have a hankering for something sweet at 8 O'clock at night and can't be bothered turning the oven on then I've got you so covered with these Mocha Self-Saucing Puddings. Put it on your list of things to make this winter (or even summer).

Ingredients

:

Mocha Pudding Base

  • 4 Tbsp Self Raising Flour
  • 2 Tbsp Brown Sugar
  • 3 Tbsp Cocoa
  • 3 Tbsp Milk
  • 4 Tbsp Oil (I use rice bran oil)
  • 2 Tsp Instant Coffee dissolved in 1 Tbsp Boiling Water
  • 1 Egg

Chocolate Sauce

  • 2 Tbsp Cocoa
  • 3 Tbsp Brown Sugar
  • 6 Tbsp Boiling Water

Instructions:

Mocha Pudding Base

  1. In a small mixing bowl add the flour, sugar, cocoa, milk, oil, coffee mix & egg. Mix it all together until thoroughly combined.
  2. Grease two large ramekins or large mugs and divide the mixture between the two vessels.
  3. Set aside and make the chocolate sauce base.

Chocolate Sauce

  1. In a small ramekin mix together the cocoa and brown sugar together until combined.
  2. Sprinkle the mixture over the top of the two ramekins or mugs.
  3. Pour the boiling water evenly between the two pudding bases over the top of the chocolate sauce base.
  4. Pop one of the ramekins or mugs into the microwave with a saucer underneath in case a little bit of overflow happens.
  5. Microwave on high for 1 Min 30 sec and remove.
  6. Repeat with the second one.
  7. Let it cool down slightly before topping with a scoop of ice cream.

Cooks Notes

  • If you don't want to microwave these simply pop into a preheated 180 degree oven for about 10-12 minutes or until cooked through.
