Gooey Chocolate Chia & Sweet Potato Brownie - Dairy & Gluten Free

It's time for some chocolate guys, Gooey Chocolate Chia & Sweet Potato Brownies to be exact. Don't be put off by the sneaky ingredient of sweet potato. You can't taste and it gives the brownie a deliciously moist crumb. This recipe came about as all my chocolate recipes do... cravings got the better of me. Since I am trying to put a healthier foot forward I thought I should try and come up with something that was a little healthy to appease the chocolate cravings.

I've played around with a sweet potato brownie before - you can see the recipe for it here. The recipe for this particular brownies stemmed from a newspaper cutting I snipped out of my local rag a few months back. I had forgotten that I had snipped it out and stuck it into one of my many cookbooks that I make notes in on recipes that I have created. I was browsing through this book - full of many notations and recipes that I really should make for the blog and came across this little number. It stems from chef Dominique Rizzo and it's a recipe she uses for a guilt free brownie. I wanted to take the guilt-free brownie to another level and try and get rid of the oil/butter factor in it and swap it with sweet potato.

I believe the experimentation was successful and I am really happy with how it turned out. The brownies have a springy texture with a soft and gooeyness to them. Don't overcook them as they will lose the gooey factor. It just needs to be cooked enough that the centre springs back. No more. These little beauties appeased the chocolate monster within and I didn't feel one bit guilty downing a couple of squares of these bad boys and neither should you when you make them.

Tell me why is chocolate so good when you're a raging hormonal mess, or stressed, or cranky or even happy and want a little chocolate celebration in your life. I am sure there is some scientific study done for this but honestly Chocolate turns my frown upside down. That's enough in my books (and my husbands when he's facing a crazy wife). Ha.

I hope you give them ago because I think you will be pleasantly surprised just how good they are considering they hide sweet potato and chia in the batter. They will certainly be a regular staple in my freezer for those raging hormonal days or when the kids have pressed every button and I can't hold it together one more second. Gooey Chocolate Chia & Sweet Potato Brownie

Cook Time: 20-30 minutes

Makes: 15 Pieces

Ingredients:

  • 200g sweet potato, diced and steamed until tender. Mashed and cooled.
  • 4 tbsp chia seeds
  • 1 cup water
  • 5 eggs, lightly whisked
  • 1/2 cup maple syrup
  • pinch salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup almond meal
  • 1/2 cup cocoa
  • 1 tsp bicarb soda

Instructions

Preheat oven to 170 degrees C (Fanbake). Line a 28 x 18cm slice pan with baking paper and set aside.

In a small bowl add the chia seeds and water and stir to combine. Set the mix aside for 15 minutes to let the chia soak up the water.

Meanwhile, in the bowl of an electric mixer add the eggs and beat until light and creamy. Add the maple syrup, vanilla, salt and cinnamon.

Sift in the cocoa and add the almond meal and bicarb soda. Add in the chia mix and cooled mashed sweet potato. Mix on low until combined.

Spread the mix into the lined slice tray and place into the preheated oven

Bake for 25-35 minutes or until a skewer comes out clean.

Set the brownies aside to cool completely before slicing into squares.

Sift a little cocoa powder on top of the brownies before serving.
