Boy have I got a great recipe for your today. The kids are going to love eating it, the mum's are going love making it and the dads will be happy getting this put in front of them for dinner. It's my Mini Turkish Pide Pizza's. The perfect mid-week meal to feed the whole family. I can attest to that. When I served this up for the family the other night it was a definite winner. The baby ate it with glee, the two other kids requested it for their lunch boxes the next day and hubby was impressed with the nights fare. So I was happy all round with the reaction from my latest recipe.

I will readily admit not all dinners go down so well in our house. The adults might thoroughly enjoy something but the kids pick it to bits and whine and complain about what's on offer. So when something goes down so well I make sure I add it to the menu plan for future reference and these Mini Turkish Pide Pizza's make the cut. Plus I have to share it with you guys because if something goes down so well with the family then it might just go down really well with yours. Depending on your families taste buds that is. I have kept this kid-friendly in the spice department.  If you have a hankering for a little more kick than make sure you add some chilli to the mince filling if you don't need to worry about young taste buds.

My two ingredient dough recipe makes the perfect base for these pizza's but if you are wanting an even lazier option than just go with puff pastry as the base. Another time-saving tip is to make a double batch of the meat filling and portion and freeze it for a quick and easy meal on the fly when you just can't be bothered cooking but want something damn delicious. I find having something like this up my sleeve saves my butt on a Friday night when I just don't want to cook but don't want to spend money on takeout. I give myself high five's on nights like this for my pre-planning.  We as a family don't eat a lot of takeout because we struggle to go out with the kids around bedtime (hello feral hour) or when we try we just don't enjoy the place we choose or struggle to find something that fits my food allergies (hello gluten and dairy intolerances) So we find that eating at home fits us better at this point in life rather than eating out a lot. That being said we have our favourite places we go and normally get the kids looked after to enjoy them in peace and quiet.

Mini Turkish Pide Pizza

Prep Time: 45 min

Cook Time: 25-30 minutes

Ingredients (Serves 4)

    DoughMeat Filling
    • 1 -2 tablespoon olive oil
    • 1 medium onion, finely diced
    • 3 garlic cloves, chopped
    • 500g beef or lamb mince
    • 3 tbsp tomato paste
    • 2 teaspoon ground cumin
    • 2 teaspoon ground coriander
    • 2 teaspoon smoked paprika
    • 1/2 teaspoon salt
    • 1/2 tsp pepper
    • 1 large tomato, diced
    • 1 carrot, finely diced
    • 1 zucchini, finely diced
    • 1/4 cup water
    • 3 tbsp pine nuts
    Garnish
    • Cucumber ribbons
    • Diced tomato
    • 2 tbsp fresh parsley, chopped
    • 2 tablespoons fresh mint, chopped
    • Lemon quarters
    Garlic Yoghurt
    • 1/2 cup greek yoghurt
    • juice of half a lemon
    • 1 x small garlic clove, finely minced

    Instructions

    Dough

    Follow the instructions on making the two ingredient dough. Divide the dough up evenly into golf ball sized pieces.

    Line a large baking tray with baking paper and set aside.

    Roll out the dough into rounds about 1/2 cm thick. Pull the edges over about 2cm in and press down to create a crust edge. Set the rounds out on the lined baking tray and set aside.

    Meat Filling

    In a large saucepan over medium heat add in the olive oil, onion and garlic and saute for a few minutes until translucent.

    Add in the mince and cook until browned remembering to remove any clumps as the mince cooks.

    Add the tomato paste, spices and salt and pepper to the meat mixture and cook for 1-2 minutes until fragrant.

    Add the diced tomato, carrot and zucchini along with the water. Simmer on low for 5-8 minutes until the vegetables have softened. Add in the pine nuts and stir to combine.

    Remove from heat and let the filling mixture cool slightly.

    Assembly

    Preheat oven to 180 degrees C (fan bake)

    Add a few tablespoons of the meat filling to the centre of the dough rounds on the baking tray. Press the filling out to the edges of the crust. Repeat with the remaining dough rounds.

    Place into the oven and bake for 25-30 minutes until golden brown.

    Remove them from the oven and let the pizza's cool slightly before adding the toppings.

    Drape the pizza's in cucumber ribbons, diced tomatoes and drizzle with the garlic yoghurt and finish with a sprinkle of parsley and mint.
