Gooey Vegan Double Choc Chip Peanut Butter Cookies {DF, GF & Vegan}
It's Friday and we are talking cookies today. Specifically these Gooey Vegan Double Choc Chip Peanut Butter Cookies. When these cookies come out of the oven they are terribly hard to resist. Trust me because after my first nibble of these warm cookies I was reaching back for a second and third taste and I ended up having to pack them up quick smart and put them in the freezer before I devoured the entire batch. It's warm chocolate it gets me every time.
These Gooey Vegan Double Choc Chip Peanut Butter Cookies are seriously to die for and I will tell you they contain a secret ingredient - which don't be put off by. It gives these cookies a secret boost of protein keeping your tummy full for longer and stopping your blood sugar from riding a rollercoaster.
There is something about Choc Chip cookies that just speak to me. It's my comfort food. Whenever I am feeling slightly (or a lot) emotional all I want is chocolate. If it is in the form of a Gooey Vegan Double Choc Chip Peanut Butter Cookie than that is a double win because it combines my two favorite foods. Peanut butter & Chocolate. They are my achillies heel. Give me one or the other and I'm good but combined I am in heaven.
The secret ingredient in these cookies is chickpeas. Don't be put off by them they make the cookies soft and gooey and pack a protein punch along with the peanut butter that you wouldn't get with a normal cookie. You cannot taste them because I tried them on hubby and he was pleasantly surprised at just how good they tasted. He has had experience with my healthy baking and not all things past his taste bud test. These did. They also passed the kids taste bud test and were asking for more. So I was happy with that. I mean just look at how good they look. Who wouldn't want to eat one.
The recipe is naturally vegan using the chickpeas and peanut butter as a binder instead of egg. So it makes a great alternative for those suffering an egg allergy. Since the chickpeas also sub out flour it is naturally gluten free and the peanut butter subs out butter it is dairy free. So these cookies make a great allergy friendly alternative and it's a one bowl thing to make them. All ingredients expect the chocolate chunks go in the food processor and you're in business. Now that is my kind of cooking. YES!
