Tasty Tuesday - Caramel & Walnut Melting Moments

What do you look for in a great blog? What makes you keep coming back to read and re-read the posts that are put up by that blog? Is it the pictures you like looking at? The giveaways or the actually words written by the blogger? or the yummy recipes they keep putting up! :-)




I have been contemplating these things of late as I have a lot of thinking time at my hands these days as I await for Baby to arrive. It's not that I want to make this blog into something that it is not. But maybe there is things that I can improve on? Write more in my posts? Less or more pictures or write more often.... not that I can guarantee that when this little miracle arrives.


I am sure every blogger struggles with these things and quite honestly I shouldn't worry so much about it because the reason I write this blog is to express my passions in baking, renovating and decorating. However I would love some feedback some time or rather on maybe things that you would like to see, hear, read about. 


 I am not a born writer - I did OK in English at school but it was not my strength my any means. You many notice my terrible grammar and sometimes my spelling is something to be desired but this little corner of the web is mine to do with as I wish and I hope that you can look past the terrible grammar and enjoy what I have to share.


I don't like to write about deep and meaningful things - not that I am a shallow person but I don't feel like this is the place to do that...... sometimes I might have a moment of inspiration to have something important to say but I feel this blog is to enjoy the simpler things in life - getting a bit of food eye candy and maybe even some renovation or decorating ideas.



Anyway enough contemplation on this blog... lets get to the main event! These Caramel & Walnut Melting Moments. That's what your really here for isn't it. To eat up these delicious morsels with your eyes and maybe even print off the recipe to maybe make them one day. This recipe was inspired from two things... I found Julia's melting moment recipe from Masterchef in a magazine which I used as the basis of this and the other was seeing a biscuit similar to this while lunching with some new friends recently - Lacey's version was a pecan yo-yo biscuit sandwhiched with caramel. (Thanks Lacey for the inspiration)



Oh I do hope you do because you will be in true biscuit heaven when you bite into these babies. I made these biscuits to take into my old work place last week as a little treat and to say hi. Hubby snaffled one these before I got them out the door to have with his nightly cuppa and he loved them and even reckons they were one of the best biscuits he's had in a while.



Now that's not saying much for my cooking at the moment. I have had some disasters in the kitchen over the past 9 months and the baking he receives for his morning teas is sometimes not on scratch with how I normally bake - lets see - burnt slices, undercooked cakes, sunken muffins and the list goes on. Sometimes I think I've lost my ability to cook but I think I can totally put it down to baby brain, being totally tired from this pregnancy and having no energy and have generally slapped together whatever I am trying to make for him. Sorry honey!


Caramel & Walnut Melting Moments

Cook Time: 15-20 min

Ingredients (20 halves)
    Biscuits:
    • 180g Butter
    • 1/2 cup Icing Sugar
    • 1/2 cup Custard Powder
    • 1 1/4 cup Plain Flour
    • 1 tsp Baking Powder
    • 1/4 cup, Walnuts, chopped
    • walnut halves for garnish
    Caramel Icing:
    • 1 cup Brown Sugar
    • 60g Butter
    • 2 Tbsp Milk
    • 4-5 cups Icing Sugar
    • 2 tsp Milk - extra
    • 180g butter - extra
    Instructions
    Biscuits:
    Preheat oven to 180 degrees and line a large cookie tray.
    In a mixing bowl add the butter and beat for 2 minutes.
    Add the sifted icing sugar and custard powder and mix until combines.
    Add sifted plain flour & baking powder and chopped walnuts and mix on low to combine
    Roll into walnut sized balls and place onto lined cookie tray.
    Squash with a fork dusted in flour to stop sticking. Place a walnut half on top of half of the biscuits.
    Bake for 15-18 minutes or until golden brown. Remove and cool.
    Caramel Icing
    In a saucepan over low heat add the sugar, butter and milk and stir until sugar is dissolved and butter is melted.
    Bring mixture up to a simmer and cook for 3 minutes without stirring.
    Remove from heat and let the mixture cool completly.
    In a electric mixing bowl add the extra butter, milk and beat for 2 minutes, add 3 cups of the sifted icing sugar followed by the cooled caramel mixture. Beat until combined.
    Add further sifted icing sugar to get the correct consistency for piping the icing into the biscuits.
    Fill a piping bag with the caramel icing and pipe swirls onto the biscuit halves without walnuts on top. Place biscuits halves on top with walnuts and slightly press down.
