Even though I don't have any kids that are readying themselves for the new school year, I thought I would post a back to school recipe anyway to inspire those mum's that are dreading this year's lunch making marathon.
These cute little stoplight (red/green/yellow - get it?) skewers were inspired from what I had left in the fridge today. So there is no real recipe to making these however I will post what I used anyway.
I would describe these little "sandwich's" on a stick as vibrant and hopefully exciting for the young schoolar who will eat them. They are basically a skewered sandwich, with two pieces of bread at either end with salad items and a piece of chicken breast in the middle. You could use any type of leftover meat such as sausages, turkey, ham or beef. Whatever the kid likes really. I served mine alongside a dollop of hummus but even sweet chilli, bbq or tomato sauce would work as well. I know kids ADORE sauce so this might be a little incentive for them to gobble the whole thing up.
Isn't eating food on a stick WAY more exciting than sitting down to a boring salad sandwich. I know which one I'd prefer - the sandwich - nah just joking of course the skewer! These may seem time consuming but a little prep of the vegies before hand and a little help from the little people in your life will get these whipped up in no time at all.

Ingredients (6 skewers)
- 1 x large bread roll, cut into 1 inch cubes
- 6 x red cherry tomatoes,
- 6 x cucumber cubes
- 6 x capsicum cubes
- 6 x sml yellow cherry tomatoes
- 6 x cubes of chicken breast
- 6 x bamboo skewers
- hummous to serve
- Other substitutions could be diced cheese, diced carrot, avacacado cubes - the possibilites are endless
Instructions
Slide the first piece of bread onto the skewer.
Follow with a cucumber, red cherry tomato, capsicum, chicken, yellow cherry tomato and the second piece of bread.
Snap the pointed end off the skewer - for safety reasons.
Serve alongside some hummous.
