Healthy Sweet & Salty Cinnamon Crack Popcorn

This right here is my all time favourite movie snack. This Sweet & Salty Coconut Oil, Maple & Cinnamon Crack Popcorn goes down in my must eat food category when watching any type of movie. Since I am dairy intolerant my buttered popcorn days are over. Boy, I loved my buttered popcorn. However to be honest if I could eat buttered popcorn I would still make this up instead of it because that is how much I love it now. The playoff between sweet and salty, the richness of the coconut oil and the fragrant sweetness of the cinnamon goes down in my books as the best popcorn ever. It's totally addictive. 

Plus you don't have to feel guilty about gorging on this because it is not loaded with nasty ingredients, unhealthy unsaturated fats and preservatives. Home cooking at its very best I tell you. Well if you can call popping corn cooking? I use an air popcorn maker that I have used since I was 14 or 15 years old. I stole it from my parents when I got married because they never used it and I love my popcorn. I can't believe it is still going strong. 

If you are going to make this make sure you do a double batch because it goes in a heart beat. My kids love it and request it whenever we snuggle up for a movie together. I am happy to oblige because I love it myself. Also, it makes a great lunch box snack if kept in an airtight container in the cupboard. I make a big batch of this up sometimes for lunch box school snacks or if we are going on a long car trip. I pop it in paper bags as the kids get a kick eating it out of the bag.  I sometimes even make up a bag for myself to snack on in the car.

The whole recipe can be made in one bowl and you simply add all the ingredients into the freshly popped popcorn and stir away. The kids love coming to watch the popcorn come flying out of the popcorn maker into the bowl. It fascinates them every time.  We're all currently dying of a nasty flu type virus here at the moment so this popcorn is being dolled out as we snuggle down in our pyjamas and watch movies until we are cross eyed and need a nap.

Healthy Sweet & Salty, Cinnamon Crack Popcorn

Ingredients

  • 1/2 cup popping corn kernels
  • 4 tbsp coconut oil, melted
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/2 tbsp maple syrup

Instructions

Add the popcorn kernels to the air popcorn maker and turn it on. Place a large bowl in front of the popcorn maker to catch the popper kernels.

Once all the kernels have popped drizzle over the melted coconut oil and stir through. Sprinkle with the salt & cinnamon and stir to combine and finish off with drizzling the maple syrup over and stirring.

Serve in individual bowls or share one large bowl.

Cooks Notes

This popcorn can be made ahead of time and kept in an airtight container in the cupboard for up to a week.
