7 Easy Dinners For The Week Before Christmas

If you are like me and find the week leading up to Christmas absolute mayhem and the last thing you feel like thinking about is what to cook for dinner every night. Your headspace is probably on the main meal for the BIG day so let me help you with some quick and easy dinner ideas that won't have you stuck in the kitchen. You most likely will have a lot of the ingredients already in your pantry. So you don't need to go wading through the shops again. Hallelujah!!! If you don't have something I have listed then just sub with what you have. Why make things more difficult for yourself. It has to be a red alert emergency for me to want to face the shops at the moment.

We are in lockdown mode at our house. We aren't frequenting the shops nor visiting many people purely for the fact of germs. There I said it. I may sound OCD but if you have had the year of sickness that we have endured - HELLO 5 GASTRO BUGS!!! (plus all the colds, broken arms and pneumonia) I just want a sick free Christmas. Our record is to have a gastro bug at this time of year right at Christmas time (plus every holiday we have had for the past 2 years) so I am doing everything in my power not to have to endure it this year. We are going away for a week over Christmas with my husbands family with a house full of people. We had a gastro bug go through the entire house 2 years ago. This year I would like not have to deal with vomit all week. So I may have cabin fever by the end of the week but let's hope we haven't got any bugs to bring with us on holidays. So I have got some time on my hands to share with you some great meal ideas to help you with the most stressful week of the year. I'll get your dinners sorted and that will be one less thing to stress about for the week. 

1. Tamarind Beef With Vegetables & Egg Noodles:

The Tamarind Beef With Vegetables & Egg Noodles makes great use of the household staple beef mince. It's really easy to make only requires two pots, a cutting board and knife so not much cleanup and you can have it on the table in 30 minutes tops. Plus it's super healthy! What more could you ask for!

2. Sticky Honey Soy Baked Chicken Thighs

The Sticky Honey Soy Baked Chicken Thighs are a firm favourite in our house. For me, they are so simple to put together and you just pop it in the oven and then cooks some rice then dinner is done. That is my kind of meal. The kids are pretty good at eating this one so we have it on rotation a fair bit. 

3. Roasted Pumpkin, Chorizo & Vegetable Pasta:

If you have a hankering for comfort food then this Roasted Pumpkin, Chorizo & Vegetable Pasta hits the spot. Plus it's a bit sneaky and contains a fair amount of vegetables but don't tell the kids. This dish can also be on the table in 30 minutes so bookmark it for one of those long and crazy days. 

4. Sweet Potato Hashbrowns With Fried Egg, Jalapeno Mayonnaise & Salsa:

These Sweet Potato Hashbrowns With Fried Egg, Jalapeno Mayonnaise & Salsa are what I call BRINNER. Breakfast for Dinner. There is nothing more perfect than eating like this and this dish is so utterly delicious you won't even think it's weird to have BRINNER!! 

5. Double Yummy Baked Potatoes

My Double Yummy Baked Potatoes is an oldie but a goodie on this site. Crunchy roasted potatoes topped with an awesome beef mince chilli and topped with all the fixings. What more could you want? This recipe was my husband's standard go-to meal when he cooked in the early years of our marriage. 

6. 30 Minute Healthy Ginger Pork Rice Bowls:

These 30 Minute Ginger Pork Rice Bowls are the perfect summer meal. Crunchy fresh salad with a ginger spice pork mince, rice and topped with ribbons of soft egg. Delicious. Don't stress if you don't have pork mince. Turkey, chicken or even beef would be just as good.

7. Creamy Chicken Thighs With Mushrooms & Herbs:

My Creamy Chicken Thighs With Mushrooms & Herbs is one of my all-time favourite meals at the moment. I have made it every month for most of the year I love it that much. So simple to make and all it requires is a little simmer on the stove top. This dish takes a little longer than the rest to cook but in all honesty, it is worth it.
