Chocolate Baked Oatmeal - DF & GF



This recipe has been sitting in my draft folder for a little while. I thought it was time to get this recipe pumped out so you too can enjoy a decadent and delicious breakfast...... yep this is breakfast. Very decadent but totally worth it. I think I was totally sick of cereal, porridge, toast and the obligatory poached eggs for breakfast a little while back. I wanted something a little bit more interesting and maybe even a bit naughty. Actually I think my pregnancy chocolate cravings got the better of me with this one and lead me down a naughty path in creating this. Can't blame me can you?? When you are pregnant and chocolate calls you answer and QUICK! Since I am dairy intolerant I have to get a little more creative with trying to fill my chocolate cravings. Although I may have been found with my hand in the chocolate chip packet a few times recently. I regretted that the next day though..... still can't stop myself doing it.



This recipe is actually not that bad. If you forgo the chocolate sauce and use a good dollop of yoghurt instead you are filling yourself with a delicious and healthy breakfast.It is a simple combination of oats, almond milk, cocoa powder and chia. All good things to keep your energy up and your motor running for the day. Play around with the fruit on top as well - why not use some gently warmed blueberries, maybe a few slices of orange or if it's stone fruit season fragrant peaches. Oh yum. This will also make a pretty good dessert and you must make the chocolate sauce then.  I think it is a pretty flexible dish, easily made for any season. I ate this warm straight from the oven and again the next day (I made a few) cold straight from the fridge. It was as equally delicious either way. Chocolate Chocolate Chocolate my pregnant belly was exclaiming.




Would you believe this decadent looking chocolate sauce is actually dairy free (and gluten). It is a combination of coconut sugar, cocoa powder and water mixed together to make a thick, finger licking delightful sauce. This would be delicious drizzled over chocolate cake, puddings or Pavlova's. No need to miss out on chocolate sauce if you have an allergy.







Chocolate Baked Oatmeal

Prep Time: 20 min
Cook Time: 25-35 min
Serves: 2
Ingredients:
    Chocolate Baked Oatmeal:
    • 1 3/4 cup rolled oats
    • 1 3/4 cup almond milk
    • 3 tablspoon coconut sugar ( or rice malt or maple syrup)
    • 1 teaspoon vanilla essence
    • 2 tablespoon cocoa (or raw cacoa)
    • 1 tablespoon chia
    • 1/2 teaspoon baking powder
    Chocolate Sauce
    • 3 tablespoon coconut sugar
    • 2 tablespoon cocoa (or raw cacoa)
    • pinch salt
    • 2 teaspoon boiling water - slightly cooled
    Instructions:
    For The Oatmeal
    Preheat oven to 180 degrees (fanbake). Grease two oven proof ramekins.
    In a large bowl place the oats, almond milk, coconut sugar, salt and chia. Sift in the cocoa and baking powder.
    Mix all the ingredients together in the bowl until combined. Let it sit for 5 minutes to thicken slightly.
    Pour the batter into the ramekins and place onto a baking tray.
    Place into the oven and bake for 25-35 minutes or until a skewer comes out clean.
    Remove from baked oatmeal from the oven and cool slightly before smothering in chocolate sauce, topping with sliced strawberries and devouring.
    These also taste great cold the next day!
    Chocolate Sauce
    In a small bowl or mug place the coconut sugar, sifted cocoa and salt.
    Add the hot water and stir to form a thick pourable sauce.
    Add more water if necessary.
    This can be stored in the fridge and warmed slightly in the microwave to pourable consistency.
    Cooks Notes:
    *Use certified gluten free rolled oats if you have a gluten allergy
    *For a less decadent alternative dollop yoghurt on top instead of the chocolate sauce.

    I just may have licked that plate to get the last remnants of the chocolate sauce. The baby made me do it!
