I have the best summer recipe for today guys. They are my Sneaky Raspberry Choc Probiotic Popsicles and boy are they refreshing for the long, hot summer days. I created this recipe for the kids to add some sneaky probiotics to their diet without them knowing. Delicious raspberry flavour popsicles made with a sneak secret ingredient, a dash of sweetness, a squeeze of lime all coated in a good drizzle of dark chocolate. Perfection. Who could resist these Sneaky Raspberry Choc Probiotic Popsicles when it is sweltering outside, the little beads of sweat form just from hanging out the clothes. No exertion necessary to sweat in summer. The kids welcomed these popsicles eagerly after school last week when things were getting a little hot under the collar after school pickup. Mum also needed one from the long trek up and down the hill to the school from where she had to park the car.

We sat in perfect quietness as we greedily sucked our way through one of these refreshing popsicles before sitting back with satisfied grins on our faces. The kids seemed to bounce back from the hot afternoon after one of these and I was quietly happy they got their probiotic hit for the day including me too. So what is the sneak ingredient in the popsicles that make them so good? I used Kultured Wellness Coconut Kefir as the base of the popsicles. So what the heck is Coconut Kefir? It is a cultured probiotic drink that is made using coconut water as the base. I buy the starter from Kultured Wellness and it has the ability to make up to 10 Litres of Coconut Water Kefir. I love it because a lot of people go for the milk kefir and while that is great I have a dairy intolerance so it's not an option for me so the Coconut Kefir makes a great alternative. Coconut kefir contains up to 27 billion CFU per cup and 9 different strains of good bacteria in it. Plus it has this great effervescent fizz which I enjoy also on a hot afternoon with a squeeze of lime. It replaces soft drink for me and the kids also love it with a dash of orange juice in it. They think it's a "naughty" drink because it's fizzy. I let them think that so they keep asking for more. Ha

These Sneaky Raspberry Choc Probiotic Popsicle's are really easy to make and only need a handful of ingredients to whip them up. My favourite part was dipping them in the dark chocolate. I mean I love chocolate as you can probably tell by the recipes on my blog so I just had to add a little drizzle to these pops to make them a little bit more decadent.

These could be easily made in the morning and popped into the freezer and ready for when the kids come home in the afternoon. The dark chocolate drizzle is a decadent extra and would be just as nice without it if you didn't have time to do it. However if mum has had a long hard day. Just drizzle yours because you need a little pick me up. I wrote over on Instagram that I was struggling with the new routine of school drop off and pick up. The need to be out the door so early, the crazy traffic and the lack of parking just about did my head in and I am dreading the new week ahead. A lot of mum's assured me the routine does get easier as the term goes on and I am sure it will but it is just a big adjustment to my normal routine. Plus I have had to change Little Miss A's sleep routine so it doesn't clash with school pickup which has resulted in a cranky and overtired toddler. I have started dropping her morning sleep so that I can bring her afternoon sleep forward so we can pick up the kids on time. I really appreciated all the seasoned school mum's giving me encouragement and advice on how to juggle this new routine.

Anyway enough about school stuff let's jump into the recipe for these popsicle's so you can get making a batch for you and your kiddies.

Sneaky Raspberry Choc Probiotic Popsicles

Ingredients (Makes 8 Popsicles)

  • 1 cup frozen raspberries
  • juice, 1/2 lime
  • 1/2 tsp vanilla
  • 2 cups coconut kefir
  • 2 tbsp maple syrup
  • 100g 70% dark chocolate (I use Lindt)

Instructions

Into a blender or cup for a nutribullet add the raspberries, lime juice, vanilla, coconut kefir and maple syrup. Blend for 30-40 seconds until the mixture is smooth. The mix might froth up a bit of the coconut kefir so let it sit on the bench for 5 minutes until the bubble subside. Pour the raspberry mix into popsicles moulds and add in sticks to the moulds if necessary.

Place in the freezer for 4-6 hours until frozen solid.

Add the dark chocolate in small pieces to a small microwavable bowl. Heat on high for 30-second increments until the chocolate has melted. Stir between each increment.

Remove the popsicles from the freezer and gently remove out of the moulds. Dip the tip of each popsicle into the dark chocolate and let it run down the sides until it has firmed up. Place into an airtight container back into the freezer before proceeding with the next one.

Serve straight from the freezer and enjoy.

Cooks Notes

These popsicles can be kept for up to 2 months in an airtight container in the freezer.

Swap the raspberries with your favourite frozen fruit for something different. Why not try mango, blueberries or strawberries.
