Quick & Easy Banana & Oat Blender Pancakes

Guys, I have your weekend breakfast covered for your today. It's pancakes and they are just not any pancakes. They are my Quick & Easy Banana & Oat Blender Pancakes. These babies can be made in minutes with a few simple ingredients and a quick whizz in a blender. You'll be munching on fluffy pancakes in no time. 

Pancakes are my morning comfort food if there is such a thing. When I've eaten one too many eggs during the week and the last thing I feel like looking at is another egg at breakfast time. So out of desperation, I made up my Banana & Oat Blender Pancakes. It meant I didn't have to beat eggs and sift flour and all the rest. Just pop all the ingredients into the blender and whizz and whizz a touch more until you have a delicious thick batter.

When I created these pancakes I was looking for a fluffy pancake with no wheat flour, no added sugar but tasted great. A hard ask but after a few attempts, I got the combination of ingredients just right. The key to these pancakes is to have a really ripe banana. The riper the better as it will add a nice sweetness to the pancakes without adding lots of sugar. A good dash of cinnamon also helps. Gosh, I love cinnamon. I love it in my porridge, in my turmeric latte and in my smoothies. It adds a sweetness without the calories or the sugar high. 

I can also attest these pancakes are so easy to make you can make them one handed with a grumpy Velcro baby on your hip. Anyone else got a Velcro baby? It's so exhausting it isn't funny. If you are scratching your head wondering what the heck I am talking about a velcro baby is a baby that will not be put down. It is permanently attached to your hip and if it is put down because the carrier needs to use the toilet all hell breaks loose. I.e crying ensues. So most of my cooking these days is done with a babe on my hip or crying at my feet if god forbid I need to use two hands of a couple of minutes. Anyway, what I was trying to say before I got caught on my tangent is that these pancakes are really simple and easy to make and only require a blender to blitz the mix in.

Make sure you pile your pancakes high, add a good dollop of yoghurt, top with berries and finish with a good piece of drippy honeycomb. Can you see that deliciousness right there? We got given some fresh honeycomb from my sister in law and I knew it would be the first thing that I top my pancakes with.
