Caramel Peanut Obsession Cookies

It seems that I have done it again. The peanut and chocolate combination got the better of me again. I couldn't help myself and I make no apologies that is for sure.  I made my Salted Caramel & Chocolate Peanut Butter Slice last week and this week it's COOKIES! Caramel Peanut Obsession Cookies to be exact. 

These cookies are the bomb. They are the soft cookie kind with a delectable chocolate crumb stuffed with the most divine caramel, peanut nougat pieces. What inspired me to create these cookies in the first place was the mini Woolworths Select Caramel Peanut Obsession bars that I stumbled across while doing some shopping. They were half the price of the "name brand" version and looked just as good. I had a recipe that was percolating in my head - as it seems to do these days.

These bars were the cherry on the top of my recipe idea. I picked up a packet and dumped it in the trolley. J.D's eyes lit up big when I dropped them in and his chocolate radar went up as he picked up the packet reverently. He examined it and looked up at me with a wide grin and asked if these were Freddo's. That was the last treat packet of chocolate we bought the kids. We don't buy a lot of chocolate for the kids (for the Mumma that is another story) so when something special like these bars gets dropped in front of their faces they hone in on it quick smart.

When we got home and the girls were in bed napping he watched me mix, chop and stir the ingredients together in my big blue ceramic mixing bowl. His little fingers danced over the chopping board as pieces of the chocolate bars were cut up into small squares ready to be added to the cookie mix. His little fingers quietly snuck a piece of the chocolate bar as he tried to misdirect me while regaling me with stories of the day. 

I let that slide but when the fingers slide across the bench again I give him the "mum" eye and his pleading eyes asked for just one more piece. "One more and that's it, my boy." He watched the process of the cookies being rolled into balls following by them being slid into the oven on trays. Lego entertained him while the cookies bake and his little nose made him follow the smell of cooling cookies on the counter. I had to keep a hawk eye on him at this point because they were hot and I had earmarked a few that would make great hero cookies for my shoot. 

There has been more than one occasion that I have had little bite marks taken out of my hero piece of food. Much to my annoyance. The little boy was so patient as I set up my scene and took my final shots of the cookies. He did mention more than once that "They look yummy mum". As a reward for being such a patient little boy, I gave him the broken pieces of cookie from the set and let him munch on it as I packed it all up. He gave them a double thumbs up and was looking for seconds as I was packing them away. 

He was pretty smitten as you can see in the picture above. Ha.
