If you are like me and find the week leading up to Christmas absolute mayhem and the last thing you feel like thinking about is what to cook for dinner every night. Your headspace is probably on the main meal for the BIG day so let me help you with some quick and easy dinner ideas that won't have you stuck in the kitchen. You most likely will have a lot of the ingredients already in your pantry. So you don't need to go wading through the shops again. Hallelujah!!! It has to be a red alert emergency for me to want to face the shops at the moment.
We are in lockdown mode at our house. We aren't frequenting the shops nor visiting many people purely for the fact of germs. There I said it. I may sound OCD but if you have had the year of sickness that we have endured - HELLO 5 GASTRO BUGS!!! (plus all the colds, broken arms and pneumonia) I just want a sick free Christmas. Our record is to have a gastro bug at this time of year right at Christmas time (plus every holiday we have had for the past 2 years) so I am doing everything in my power not to have to endure it this year. We are going away for a week over Christmas with my husbands family with a house full of people. We had a gastro bug go through the entire house 2 years ago. This year I would like not have to deal with vomit all week. So I may have cabin fever by the end of the week but let's hope we haven't got any bugs to bring with us on holidays. So I have got some time on my hands to share with you some great meal ideas to help you with the most stressful week of the year. That is my kind of meal. The kids are pretty good at eating this one so we have it on rotation a fair bit.
