Sticky BBQ Chicken Burger With Steakhouse Fries

I have the pleasure to work with Inglewood Organic again to showcase their delicious chicken with another spectacular recipe a Sticky BBQ Chicken Burger With Steakhouse Fries. Today we are working with chicken breasts and my first thought when coming up with a recipe using this cut of meat was a burger. A tower of a burger filled with the lot. All my favourite things such as grilled onion, grilled pineapple, beetroot, tomato, lettuce, bread and butter pickles and mayonnaise. All sandwiched between a soft Brioche Bun. The crowning glory of the burger is tender and moist sticky BBQ chicken slices dripping in the most glorious homemade Sticky BBQ sauce. Don't forget the Steakhouse Fries. Chips are a must with any sort of burger along with something fizzy. Don't forget the fizz.

The summer weather is just calling to turn on the BBQ and grill up something seriously good. {Hint Hint ---> These burgers} There is something about sitting in the great outdoors smelling the waft of food cooked on the grill in the air. It get's the tummy rumbling and the mouthwatering and add in great friends and you have yourself the winning combination. Sharing these burgers is a must because while the thought of eating one by yourself is a good idea sharing with friends is even better. The perfect occasion to whip up a big batch of these burgers is coming up, Australia day. The day that the BBQ needs to be turned on and friends invited round for drinks and good food. Don't leave these burgers just for Australia day though they are for any occasion and for any time of the year. Whenever a burger craving hits this burger will hit the spot. Think picnics, sports breakups, family gatherings, parties and whenever the need arises for a darn good burger.

When I was creating this recipe I had to think on the best way to cook the organic chicken breast so that it would stay moist and tender but still allow the bbq sauce to caramelise and char on the outside when on bbq. I wanted to avoid creating dry chicken which can be easy when dealing with chicken breasts in any recipe. If you have excellent chicken like Inglewood Organic Chicken you want to treat it right so that you maximise that flavours that this meat offers. I employed two techniques to achieve a tender and moist Sticky BBQ Chicken Burger. The first was to poach the chicken for 20 minutes in a fragrant bath on the stovetop. It may seem strange to do it this way but this cooks the chicken to perfection and stays lovely and moist on the inside. Then the next step is to brush on the fragrant and delectable Sticky BBQ sauce over the breast before charring it on the BBQ for a few minutes each side to caramelise the sauce and char it to perfection. The blackened bits make for the best flavour so don't be afraid to get it a little burnt and charred - just not too much. 

All you need to do is then slice the breast thinly on the diagonal and set out all the fixings for the burger in preparation for assembly. Leave it up to your guests to add what they like to their burgers starting with the foundational ingredients of grilled onion, lettuce, tomato and mayonnaise and let the more adventurous add the pickles, beetroot and pineapple if that floats their boat. Me, I want the lot. A towering burger filled with all the fixings melding together to create one heck of a burger. Oh and don't forget a good serving of Steakhouse Fries. These are so easy to make and would you believe they are made from scratch covered in a tasty Steak Seasoning to give it a bit of kick and then baked in the oven until golden brown and crispy.

If you think you have a lot of the Sticky BBQ sauce when you make up the recipe than that is right. I made sure there were plenty of leftovers of the sauce to douse onto your burger for a bit of extra BBQ hit. If you want to preserve the leftover sauce pour it into icecube trays and freeze. Pop the cubes out of the tray and store in a Ziploc bag for when you want to make this burger again and there will be no need to make the sauce from scratch. Time saving at it's best.

Do you want to know the best part of this Sticky BBQ Chicken Burger With Steakhouse Fries is? You can serve a family of 4 for under $30 and that includes buying a packet of two Inglewood Organic Chicken Breasts which is more than enough for a family of 4. There is no need to skimp on flavour or taste with this burger. Do want to know my other secret? I bought all my fixings and burger ingredients from my local Aldi. The savings you can achieve by buying your staples from there is amazing. What a saving it would for a family of 4 to make these at home and save some serious dollars instead of eating out. A gourmet burger can usually cost between $12-16 conservatively so you are looking at saving at least $30 alone by making them at home. Plus you can pimp in the way you like and it and know what ingredients (great ones) are going into it.

Sticky BBQ Chicken Burger With Steakhouse Fries

Ingredients (Serves 4)

    Sticky BBQ Sauce
    • 1/2 cup tomato paste
    • 1 tsp allspice
    • 4 tbsp apple cider vinegar
    • 4 tbsp Worcestershire sauce
    • 1/2 cup honey
    • 1 tbsp dijon mustard
    • 1 1/2 tsp smoked paprika
    • 1 tsp oregano, dried
    • 2 cloves garlic, minced
    • 1/2 tbsp salt
    Sticky BBQ Chicken
    • 2 cloves garlic, cut in half
    • 1 Litre chicken stock
    • 1 bay leaf
    • 2 cloves
    • 2 x Inglewood Organic Chicken Breasts
    • 1/2 cup Sticky BBQ Sauce
    Steakhouse Fries
    • 4 x large potatoes, peeled and cut into thick fries
    • 2 tbsp olive oil
    • 1 teaspoon steak seasoning
    • 1 teaspoon salt
    Grilled Onion
    • 2 x onions, slice thinly into rings
    Burger Fixings
    • Brioche Buns
    • Tinned pineapple rings
    • Tinned beetroot
    • Bread & Butter Pickles
    • Mesculin lettuce, rinsed
    • Tomato, sliced
    • Mayonaise

    Instructions

    Preheat oven to 180 degrees C and line a large baking tray with baking paper. Set aside.

    Sticky BBQ Chicken

    Add the chicken breasts, chicken stock, garlic, bay leaf and clove to a large saucepan and place onto the stove to bring to the boil. Cover with a lid and take the saucepan off the heat. Leave the chicken breast in the saucepan and cooking liquid for 20minutes to poach. Cooking it in this way keeps the chicken tender and moist.

    Remove the chicken from the saucepan (making sure to keep the cooking liquor) and place onto a small tray and dab with paper towel to dry the outside.

    Using a pastry brush, brush the chicken with the sticky bbq sauce on the front and back and leave to rest in the fridge until required.

    Sticky BBQ Sauce

    In a small saucepan over medium heat add all of the sauce ingredients to the saucepan. Bring the mixture to the boil and then reduce to low and let it simmer for 5-8 minutes until it thickens. Stir regularly to stop it burning on the bottom of the pan. Once it has thickened remove the sauce from the heat and let it cool before pouring it into a jar or container. Set this aside.

    Steakhouse Fries

    Using the liquor that the chicken was cooked in, add the cut potatoes to the saucepan, cover and bring to the boil. Simmer for 5-8 minutes or until the potato is just cooked through.

    Drain the liquid from the pan and add the fries to the large lined baking tray.

    Drizzle over the olive oil and toss the fries to coat them completely. Sprinkle with the salt and steak seasoning before adding to the oven to cook for 30-40minutes or until golden brown.

    Sticky BBQ Chicken Cont...

    Remove the chicken from the fridge and heat the bbq grill to medium heat. Brush on another coat of the Sticky BBQ Sauce to the chicken before placing onto the preheated grill. Cook for 5-6 minutes on each side until it starts to char and burn slightly. Keep adding the marinade to each side as your turn, so that creates a lovely sticky coating. Remove the chicken once it has cooked and let it rest for 5 minutes before slicing thinly on the diagonal.

    Grill the brioche buns for a minute on the inside of each piece on the heated grill to lightly toast them before assembly.

    Grilled Onion & Pineapple

    Add the onion to the heated BBQ plate and cook for 10-15 minutes or until translucent and slightly crispy. Add a pinch of salt during the cooking process to help it stop burning. Add the pineapple rings once the onion has been removed and cook for about 2-3 minutes each side until caramelised and brown. Remove from the heat and add to the tray along with the grilled onion.

    Assembly

    Lay out all of the ingredients on the table so that your guests can create their own Sticky BBQ Chicken Burger masterpiece. My favourite way to build the burger is to add a dollop of mayonnaise to the base of my burger bun. Top with lettuce, tomato, beetroot, pineapple, Sticky BBQ chicken breast, pickles followed by grilled onion and a small dollop of the Sticky BBQ Sauce on top. Add the top bun and press down slightly. Grab a serving of Steakhouse Fries and sit and enjoy your creation.

    Cooks Notes

    There will be a lot of Sticky BBQ Sauce leftover. To keep it merely pour into icecube trays and freeze. Once frozen remove the cubes and add to a Ziploc ready to be defrosted for future use.
