Tamarind Beef With Vegetables & Egg Noodles

I've got another quick and easy dinner for you today and this one I am really excited about. It uses the humble beef mince which as cooks we are always looking for ways to use this cheap ingredient. There is only so much spaghetti, taco's, meat balls or lasagna one can eat before getting tired of the repetitive menu options that beef mince has to offer.

I am always on the lookout for different recipes that utilise mince that is not one of the above. Are you the same? Since having kids we eat more mince and sausages than we ever did in our entire married life. One, because it is cheap, two because it is quick to make into a meal and three, the kids are more inclined to eat something they don't have to chew a lot on. Anyone else's kids like mine who for the life of them take half the night to chew on a couple pieces of chicken or steak?

If we pull out sausages out of the freezer I am always guaranteed that the plates will be clean in no time. Anything else well it's all left to chance and sometimes they will surprise me with clean plates on some dishes I think there is no way they will like this. 

I think the kids enjoyed this Tamarind Beef With Vegetables & Egg Noodles. They loved the noodles more than anything and I secretly snuck as many vegetables as I could into the Tamarind beef so what they did eat they were at least eating half vegetables. Winning.

When reading this recipe you might find some strange ingredients such as Tamarind puree and Chinese Cooking Wine. I can promise you that you can find these all from your local supermarket. You won't need to be scouring the shelves of your Asian grocer trying to pick up some weird and wonderful ingredient. My aim is for the novice cook to be able to make most of my recipes without too much stress or buying expensive and weird ingredients. Some of the most wonderful dishes are made with only a handful of simple ingredients. 

I easily made this dish in under 45 minutes from start to finish and could have probably done it even quicker without a velcro baby in my arms. I hope you add this one to your list of recipes to try because I am confident you will find it a winner with the family.
